Pumpkin Cookies

These are incredibly easy to make and go great with coffee or tea. Ingredients: 2 cups all-purpose flour 1 tsp baking powder 1 tsp ground cinnamon 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp ground allspice 1/2 tsp ground cloves 1 cup butter, softened 1 cup sugar 1 cup canned pumpkin 1 large egg 1 tsp vanilla 1 cup chopped pecans Directions: Preheat oven to 375. Mix flour, baking powder, cinnamon, baking soda, salt, allspice and cloves in a medium bowl. Beat butter and sugar until light and fluffy. Beat in pumpkin, egg and vanilla. Gradually add flour mixture until fully blended. Stir in the pecans. Drop by 2 tablespoons onto cookie sheets. Bake for 12 minutes or until the cookie lightly bounces back when pressed. Let cookies cool on sheets for 1 minute, remove to wire rack to cool completely. Makes 18 cookies Michele Tracey, food editor
