Pumpkin Bread

This bread is so good it works as a morning bread like banana bread or even as a dessert. Ingredients: 1/2 cup canola oil 1 3/4 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon pumpkin pie spice 1/2 teaspoon salt 1/4 teaspoon baking soda 1 cup pure pumpkin puree 3/4 cup granulated sugar 1/4 cup packed brown sugar 1 egg 1 teaspoon vanilla extract Heat oven to 350 degrees. Spray an 8 1/2 x4 1/2 loaf pan. Whisk together flour, baking powder, spice, salt and baking soda in a medium bowl, set aside. In a separate bowl, whisk together the pumpkin puree, both sugars, oil, egg and vanilla. Add the dry ingredients and mix until just combined. Pour into the prepared pan and bake until a toothpick comes out clean, 55-60 minutes. Let cool in pan for 15 minutes and then transfer to a wire rack and cool completely. For a dessert, look sift powdered sugar on top of bread. Michele Tracey, food editor
