Cherry Chocolate Baby Cakes

These are a great mini dessert for Valentine’s Day! Ingredients: 1 package brownie mix 1/2 cup vegetable oil 1/4 cup water 2 eggs 2/3 cup cherry preserves 2 1/2 cup powdered sugar 2 1/2 tablespoons milk 40 maraschino cherries, drained and patted dry, reserved juice Preheat oven to 350. Line 40 miniature muffin cups with liners, spray liners and pans. Combine brownie mix, oil, water and eggs in a bowl until just blended. Spoon a scant teaspoon into each muffin cup. Add 1/2 teaspoon of cherry preserves and top with 1 teaspoon of batter, may only get 36. Bake for 10-15 minutes, until just set and a toothpick comes out clean. Cool in pans for 5 minutes, then remove to a wire rack and cool completely. Mix powdered sugar, milk and maraschino cherry juice (to give it color and flavor) in a bowl. Dip cherries in icing and place on each cake, drizzle remaining icing over cupcakes. Might need to eat with a spoon or fork because of the cherry preserves. Michele Tracey, Food Editor
