Turkey-Cranberry Panini

This is a great sandwich for the fall season and super easy to make. If you don’t have a panini press, don’t worry. Ingredients: A good sturdy bread like sourdough or rye Sliced roasted turkey Cranberry sauce Blue Cheese Arugula Olive oil Directions: If using a panini press, warm it up, if not warm up a small frying pan over medium high heat. On one piece of bread spread cranberry sauce, a little thick. Add turkey on top, as much as you would prefer, next add the blue cheese a good amount so when it melts it covers the whole sandwich. Top with other piece of bread. Place on the panini press and close lid, wait till the cheese is melted about 4 minutes; if using a frying pan grill like a grilled cheese, flipping about 3 minutes in so both sides get warmed up and the cheese melts. While the sandwich is cooking take the arugula in a bowl and drizzle with olive oil. When the cheese has melted remove from heat and pry open the sandwich, add as much arugula as you want and enjoy.
