Toasted Almond Cookies

These cookies are perfect for the start of fall. Not too much work in the kitchen but a nice nut flavored cookie to get you ready for the start of holiday season.

Ingredients:
1 vanilla cake mix
1/3 cup vegetable oil
2 eggs
2 teaspoons almond extract
1 1/3 cups toasted sliced or slivered almonds

Directions:
Preheat the oven to 350, with a rack in the middle position. Line cookie sheets with foil and spray with cooking spray.
Place half of the cake mix in a bowl with the vegetable oil, eggs and extract. Mix with a whisk until smooth, can also use an electric handheld but be careful to not overmix.
Stir in the remaining cake mix until all the dry is incorporated.
Drop dough buy the teaspoon onto the cookie sheets, about 2 inches apart. The cookies will not spread to much. Sprinkle the almonds on top of the cookies and gently press into the dough.
Bake for 9-12 minutes, rotating half way through. The cookie will be just set in the middle. Let rest for 1 minute on sheet before transferring to cool completely.
