Peanut Butter and Oatmeal Cookies

While these do not have peanut butter, they do have the peanut butter chips you find in the baking aisle. For those of us who don’t like raisins, this is a great way to still have and oatmeal cookie! Ingredients: 1 1/2 cups packed brown sugar 1 cup butter, softened 1/4 cup shortening 1 tablespoon milk 2 teaspoons vanilla 1 egg 2 cups all-purpose flour 1 1/2 cup regular or quick-cooking oats 1/2 teaspoon baking soda 1/2 teaspoon salt 12 ounces peanut butter chips Directions Heat oven to 375. Mix the brown sugar and all wet ingredients together. Add the dry, including the peanut butter chips, mixing just till combined. Drop the dough by heaping teaspoons onto baking sheets. Bake until light brown, 10-12 minutes, rotating the sheets in the oven halfway. Makes 50-60 cookies Michele Tracey, Food editor
