Peanut Blossom Cookies

These are a great cookie for the holidays! One batch makes between 90 and 100 cookies, they are small and they are very easy to throw together.

Ingredients:
2 1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup roasted salted peanuts
2 sticks unsalted butter, softened
3/4 cup packed brown sugar
3/4 cup granulated sugar
1 cup creamy peanut butter
2 eggs
2 teaspoons vanilla
96 Hershey’s Kisses (may need a bit more or less, depending on how diligent you are rolling out the cookies)

Directions:
1. Adjust oven rack to middle position and preheat to 350 degrees.
2. Whisk flour, salt, baking soda and baking powder together in a bowl. Process the peanuts in a food processor until ground, then stir into the flour mixture.
3. In a mixer, beat the sugars and butter together until fluffy. Add the peanut butter, beat until combined. Add eggs one at a time, then beat in the vanilla. Reduce speed to low and add the flour mixture in two batches. Mix until incorporated. Cover the bowl and refrigerate until stiff, about 30 minutes.
4. Roll 1 inch balls and space them two inches apart on baking sheet. Bake until set and beginning to crack, 9-11 minutes. Rotate the sheet halfway through. Working quickly, remove the sheet from the oven and firmly place one kiss on each cookie. Return to the oven and bake until golden brown, about two more minutes. Let cookies set on sheet for five minutes then transfer to a wire rack to cool completely. The kisses will take two hours to set completely.
