Molasses-Spice Cookies

This time of year always makes me crave the smell of ginger and spices baking into a cookie. These cookies take the idea of gingerbread and simplify it down to the perfect pairing with a cup of warm tea or coffee. Ingredients: 2 1/4 cups all-purpose flour 2 teaspoons baking soda 1/2 teaspoon salt 1 1/2 teaspoons ground cinnamon 1 teaspoonground ginger 3/4 teaspoon ground cloves 1/4 teaspoon ground allspice 12 tablespoons unsalted butter, softened 1/2 cup dark brown sugar, plus more for rolling cookies 1 large egg 1 teaspoon vanilla 1/3 cup unsulphured molasses Directions: Preheat oven to 375. Whisk together the flour, baking soda, salt, and spices in a bowl, set aside. With and an electric mixer, cream butter and sugars until light and fluffy. Scrape sides of bowl, add the egg, vanilla and molasses. Beat until combined, scrape sides of the bowl. Add the dry ingredients and mix until just combined. Place about a 1/3 of a cup of granulated sugar in a small bowl, working with about 2 tablespoons of dough at a time, roll into a ball and then roll the ball through the sugar. Place on ungreased cookie sheets about 2 inches apart. Bake, reversing the positions of the cookie sheets halfway through, for about 11-13 minutes, the edges will begin to set and the centers are still soft and puffy.
