Drink a little Sunshine

During a Summer like this, I like to keep refreshing drinks in the fridge so I can have a little something sweet without a lot of effort. Lemonade is a perfect Summer drink for almost any occasion. I also tend to think of it as a “happy” drink to use whenever I need a little stress reliever. This version is very easy to make and versatile to adapt to anyone’s tastes.

Ingredients:
3/4 cup sugar
1 cup water
zest from 1 lemon
2 cups lemon juice
4 cups water

Directions:
1. Put sugar, 1 cup water and the lemon zest in a small saucepan. Bring to a slow simmer and reduce heat to medium. Leave on heat until the sugar is completely dissolved. Do not stir the sugar.
2. Combine the lemon juice and the 4 cups water in a pitcher. When the sugar has completely dissolved, add to the pitcher. Taste the lemonade, if you want it a little more tart, add some more lemon juice. If it’s too tart, add a little more water.
3. If you want to dress up the lemonade, you can add fresh lavender or mint before it is chilled or even strawberries or raspberries. Enjoy!
