Crunchy Frostbite Cookies

These are a great light cookie for the winter, it works as a gift or just to have around the house.

Ingredients:
2 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 cup shortening
3/4 cup granulated sugar
3/4 cup firmly packed light brown sugar
2 large eggs
1 tsp vanilla
1 1/2 cups uncooked regular oats
1 1/2 cups cornflakes cereal
12 oz white chocolate chips
1/2 tsp peppermint extract

Directions:
Combine flour, baking soda, baking powder and salt.
Beat shortening at medium speed until creamy; gradually add sugars, beating well. Add eggs and vanilla. Add flour mixture, mixing just until blended. Stir in oats and cornflakes.
Drop dough by heaping tablespoons, 2 inches apart, onto lightly greased baking sheets. Bake at 325 for 12-14 minutes. Cool slightly then transfer to wire racks to cool completely.
Microwave white chocolate until melted completely, stirring often. Stir in peppermint. Dip flat end of cookie in chocolate, wiping out excess. Let chocolate set.
Makes about 3 dozen
