Classic Lemon Squares!

I love to make these to take to just about anything, or simply to enjoy at home with family! This recipe is full of the goodness of eggs and Vitamin C of lemons. The sugar can be reduced by using Truvia or another sweetener, but  I found that Truvia (or Stevia) tastes the best!      Janine

Classic Lemon Squares:

2 C flour
½ C Confectioner’s Sugar
1 C margarine (or 1 C butter or ½ C margarine and ½ C butter)
A pinch of salt

Mix flour, Confectioner’s Sugar, and salt. Cut up the margarine (with a knife) in small cubes and “cut in” that margarine (or butter) into the flour with a pastry blender or a fork. Do this until the mixture looks all crumbly and the lumps of margarine are mostly gone.

Pat this flour/margarine mixture in a pan (9”x13”) Glass dishes work best but others can be used successfully. Bake at 350° for 20+ minutes until nicely browned.  Remove from oven and rest on a safe surface for a few minutes.

While the crust is baking….
 Mix (whisk ) together:

 4 eggs slightly beaten (or 1 C of Egg Beaters)
2 C sugar (or 1 C Truvia and 1 C sugar)
6 TBSP lemon juice (fresh squeezed or bottled)

 Pour mixture over the crust hot from oven. Bake at 350° for about 25+ minutes. Sprinkle all with Confectioner’s Sugar. When cool, cut in squares (I can get either huge or tiny bites out of this size pan.)  Totally Yummy!
