Caprese

This is a really simple but amazing side dish for spring and summer. The key is really good tomatoes!

2 ripe tomatoes
8 oz fresh mozzarella (if you can find the pre-sliced get it)
10-15 fresh basil leaves
salt and pepper
olive oil
Slice the tomatoes a quarter inch thick, slice the cheese about a quarter inch thick. Arrange the tomatoes on a plate in a single layer. Layer the cheese on top, sprinkle the basil over the cheese then add the salt and pepper. Drizzle a little olive oil over the layer. Repeat until out of tomatoes. Serves 4-6
